Cutting boards covered in cold cuts and cheeses (but not only) are a part of Italy’s culinary tradition and are often a great accompaniment to an aperitif or a glass of fine wine. So, in this in-depth study we want to take a look at how to prepare them, with an arrangement so that all ingredients are neat and tidy and nice to look at.

Choice of ingredients
When it comes to serving delicatessen foods in Italy, the choice we have just considering platters is truly boundless, but a good cold cuts and cheese board is recognized in any case by one specific characteristic: variety. Care should therefore be taken to choose at least three to four different cold cuts, and not stray too far from this quantity; the same thing could be said for cheeses.
The job of selecting the meats and cheeses can enhance the whole effect if we consider the pairings. For example, cooked ham with Asiago, bresaola with crescenza, coppa with provolone, salami with Parmigiano Reggiano.
These two great classics must then be complemented by all the accompaniments, so breadsticks, olives, pickles, and even honey, mostarda and jams, which go well with the main ingredients.
Arrangement of the cold cuts and cheese board
When preparing a platter, the arrangement of the cold cuts is what makes the difference in terms of neatness and presentation. They are often seen layered, but our advice instead is to put them side by side, starting from the thicker cuts and those with a blander flavor and then arranging the thinner and spicier cold cuts.
Cheeses, on the other hand, can be laid on top of the cold cuts depending on the accompaniment. Jams, vegetables, and pickles can then be arranged on the right, and bread on the left.
